Sweet Potato Black Bean Patties
This recipe is full of nutrient-rich ingredients. Most people don’t get enough fiber in their diet, so these patties are a perfect plant based way to add fiber, fun and flavor to many meals. This recipe is my own and I couldn’t be more proud of the way it turned out.
If you’ve never made a plant based patty, don’t be scared. You won’t have to give up your 9-5 job, stop showering, and live in a van covered in peace signs (even though that could be fun for a short time) to enjoy all the health benefits that plants have to offer.
Even though these patties are meatless, my meat-eating-Texas-raised-husband, has asked me to make them several times in the same week because he loved them so much.
These patties are versatile.
Here are a couple ways you can enjoy these sweet potato black bean patties:
Make great vegan burgers! They are’t high in protein by themselves, but they do contain quinoa, which is a complete plant protein. Add your favorite bun, guacamole, and enjoy!
Add fish! Use the patties as a base, then add smoked salmon, red onion, and a bit of sour cream on top for a tasty and unique meal. Your taste buds will thank you.
Add grilled chicken! Chicken is a familiar territory for a lot of you. That’s okay, no shame in that! If you’re trying to hit a certain protein goal for the day, add a grilled chicken breast, and use this patty as your fiber rich carb. Delicious, and it probably fits your macros! ;)
Ingredients:
•1 cup Sweet potatoes (cooked, should be smooshy)
•1/2 cup quinoa cooked
•1 can Black Beans, drained and rinsed.
•1 Tbsp. Flax-seed meal (if you have whole flax-seed, they can be ground in a handheld coffee grinder)
•3 Tbsp. Water
•1 lime squeezed
•Cilantro to taste, Chopped
•1 1/2 tsp Cumin
•1/2 tsp Curry
•1 tsp. Garlic powder
•1 tsp. Chili powder
Instructions:
Mix the flax meal and water and set aside. Use a potato masher to smash black beans, then add quinoa, and potato, mashing until well mixed.
Once flax-meal has set and there is a gel residue, mix it in as well.
Finally mix lime and all spices remaining. Shape into 6 patties.
Use a large pan and lightly coat the bottom with a cooking spray of your choice (canola, olive, or avocado oil)l. Cook on medium heat for 4-5 minutes on each side.
Serve with homemade/store bought guacamole! Makes 6 patties.
